Introduction

A refreshing summertime change from lettuce salads. A refreshing summertime change from lettuce salads.
Number of Servings: 8

Ingredients

    About 4 cups of Fresh cucumbers, chopped, with or without peel
    4 medium tomatoes, chopped
    1 green pepper, chopped
    1 medium onion, chopped
    about .25 cup chopped fresh parsley
    2 garlic cloves, minced fine
    4 TB Olive Oil
    .5 cup Red Wine Vinegar
    Salt, Black Pepper, Oregano and Sweet Basil to taste

Directions

Chop all vegetables and mince the garlic. Mix together thoroughly in a large bowl.

Add Parsley and seasonings and again mix thoroughly.

Add vinegar and oil and toss to blend all the flavors.

Makes about 8 servings.
