Ingredients

    1 cup Sweet potato, cooked, baked in skin, without salt
    .5 cup Flour, white
    0.5 cup Whole Wheat Flour

Tips

Add spices to sweet potato before adding the flours to make sure they are thoroughly incorporated into the roti


Directions

Mash cooked and peeled sweet potato, then mix in flours and knead into a cohesive ball. Allow to sit with a towel over it for about 5-10 minutes. Uncover, give another light kneading, and roll into short log. Divide into 6 equal portions, and roll into roundish disks. Heat skillet over medium heat, and while its heating, lightly flour counter top, and roll each disk out into a round flat tortilla shape, but thicker. Place one in skillet, and leave for app 1 minute, then turn, leave until it starts to bubble, start lightly pressing on roti with back of spatula to encourage it to fill up with air. Keep flipping every 30 seconds or so until nice and puffy, and lightly browned. Place in dish towel and cover, and continue with next roti until all are done.
