Ingredients

800g round steak, minced_ all fat cut off
2 med onions chopped
4 cloves garlic, minced
1 tbs olive oil
3 med carrots, chopped and given 5 minutes in microwave to soften
1 lge red pepper chopped
4 cups chopped canned tomatoes in their juice
5 cups mashed potoato with 1 cup no fat milk
100g cheese grated_ cheddar or jack
Directions
saute the onion and mince in the olive oil until the onion is transparent and the mince browned
add the minced garlic, be careful not to scorch
add the carrots and red pepper, cook a few more minutes
add the chopped canned tomatoes with their juice
cook down until everything is tender and the sauce has evaporated a little. Simple herbs are good, a little parsley and thyme perhaps
Pour meat sauce into a 30cmx30cm x10cm baking dish
Mash the potatoes with the milk and spread this evenly over the meat mixture
Sprinkle with the cheese and bake for about 20 minutes until browned on top
