Ingredients

1 cucumber (8-1/4") Cucumber (with peel)
2 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average
1 slice, thin Onions, raw
0.5 cup Cider Vinegar
6 serving Stevia (zero Calorie sweetener)
1 cup (8 fl oz) Water, tap
1 tsp Morton Iodized Salt
0.5 tsp Pepper, black
8 tbsp Pompeian Extra Light Virgin Olive Oil
2 tbsp Rosemary
Directions
Note: I used 3 tablespoons of Stevia and 1/2 cup of the olive oil. Spark doesn't give me the option to select 1/2 cup of olive oil. In a medium size bowl, slice cucumbers, onions and tomatoes. Break up the onions into rings. In another medium bowl combine all other ingredients and whisk together. Then pour the liquid mixture over the vegetables. Pour from one bowl to another until well tossed. Refrigerate over night or at least 4 hours. I store in glass quart jars in the fridge for up to 5 days.
