Introduction

Ingredients

    4 serving Yukon Gold Potato (1 Medium Potato with skin) (by SUZISLIMDOWN)
    2 tsp Salt
    .5 tsp Pepper, black
    .5 head, medium (about 5-3/4" dia Cabbage, fresh
    1 cup, chopped Onions, raw
    3 clove Garlic
    .5 lb Pork, fresh, loin, top loin (chops), boneless, separable lean and fat, raw
    2 serving Apple - Honeycrisp, medium
    .5 tsp Sage, ground
    .5 tbsp Caraway Seed
    .5 tsp Smoked Paprika
    1 tbsp Olive Oil
    1 tbsp Earth Balance Natural Buttery Spread

Directions

Wash and dice potatoes. Boil until soft. Drain, reserving 1 cup of liquid. Mash with Earth Balance, 1 tsp. salt, and .25 tsp. pepper. Add reserved liquid to potatoes for a creamy texture. Set aside and keep warm.

Dice onions and garlic and saute in olive oil. Add diced pork loin chops, 1 tsp, salt, .25 tsp. pepper, sage, caraway seeds, and paprika, and saute until cooked through. Finely slice cabbage and add to pork mixture. Cover pan and let steam until cabbage is tender. Core and dice apples, add to pan, and continue steaming until apples are soft.

Divide mashed potatoes into four bowls. Top with pork, cabbage, and apples.
