Introduction

I make many variations of chopped salad, all are a delicious way to get those raw veggies in! I make many variations of chopped salad, all are a delicious way to get those raw veggies in!

Ingredients

    3 ear, medium (6-3/4" to 7-1/2" Sweet Corn, Fresh
    1 large (8-1/4" long) Cucumber (peeled)
    2 tbsp Extra Virgin Olive Oil
    2 tbsp Lime Juice, juice of 1 lime
    1 fruit without skin and seeds Avocados, California (Haas)
    .25 cup, chopped Onions, raw
    1 large whole (3" dia) Red Ripe Tomatoes

Tips

The only cooking is for the corn, which I take from leftover cooked cobs. This is a Summertime thing!
