Ingredients

4 serving Graham Crackers Honey Maid Honey Grahams Nabisco (GS) 8 crackers= 2 full sheets
2 tbsp Butter, unsalted
6 tsp packed Brown Sugar
3 tsp Cane Sugar
1 cup, sliced Mango
4 Large Brown Eggs
1/2 cup Unsweetened Almond Milk
1/4 tsp Almond Extract
Directions
Pre heat oven to 350 with a center rack in place. Prepare a pie pan for baking by greasing it by rubbing butter over the bottom and inner sides. In a large mixing bowl, crush graham crackers with a masher or with clean hands if necessary until crackers are completely broken up. Add 2 tbsp melted butter and 1 tbsp brown sugar. Mix well. Press into the pie pan smoothly to cover bottom and some of the sides. Bake at 350 degrees for 10 minutes then set aside to cool. Keep the oven on to bake the pie as below.
Reusing your mixing bowl from the pie crust. Cut the bottom of the mango off and standing it on it’s cut, carefully slit the top of the mango in four directions then cut the skin off the fruit in a downward motion going around the fruit Until completely peeled. Cut the mango meat from the pit, dice it and put in the mixing bowl. Then mash the cut mango and squeeze remaining pulp and juice from the mango pit.
Beat the eggs into the mango mash one at a time and blend well. Add 1 tbsp cane sugar 1 tbsp brown sugar, and 1/4 tsp almond extract. Add 1/2 cup unsweetened almond milk and mix well.
Pour into the baked graham cracker pie crust and place in center of oven. Bake at 350 degrees for 30 minutes. Remove from oven and cool before refrigerating. Serves 8.
