Ingredients

    2 pounds 85% lean ground beef
    3 large eggs, beaten
    5 oz Feta cheese, reduced fat, crumbled
    1/3 cup ground flax seed (40 grams)
    3 "generous" Tbsp sliced black olives
    5 Spring onions, only bottom 4 inches, chopped
    1 cup Spinach, fresh, chopped
    2-5" stalks of celery, chopped
    3 medium white mushrooms, sliced
    15 Manzanilla green olives, whole
    2 Tbsp dried oregano
    1 Tbsp red, crushed, chili peppers
    1 tbsp black pepper
    1 tsp salt

Directions

In a large bowl, mix all ingredients thoroughly. Place in a 9x12 baking dish and either shape into a loaf or form it to the pan.
Bake at 375 - 400 degrees for 1 hour or until juices run clear.
