Ingredients

4 1tsp Olive Oil
7 unit (yield from 1 lb ready-to-cook chicken) Roasting Chicken, light meat
6 clove Garlic
3 sweetpotato, 5" long Sweet potato
4 beets (2" dia, sphere) Beets, boiled
1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
1 cup Green Chili sauce
13 serving Beans, Black (1/4 cup dry) (by TJMARTI)
4 unit (yield from 1 lb ready-to Roasting Chicken, dark meat

Tips
A stew for whenever guests need something robust and hot in a mug.
Directions
1. fully thaw if frozen and then roast 7 lb chicken in oven on 325F for an hour, cool and wrap to protect, debone and deskin when cooled
2. preboil beets one hour and flash cold water cool to de-skin; remove skin
3. cook 3 cups of basmati rice
4. saute garlic in oil, add chopped/skinned red onions. add water, cook on medium heat until onions are translucent
5. cut sweet potatoes and boil then put on medium heat for a half hour in cauldron
6. Add garlic onion mix to sweet potatoes; cut up and add beets; add cooked basmati rice, add chicken return to boil and reduce to medium low heat
7. add green chili sauce, celery, beet stems
8. serve hot
8. reheat as needed
(can soak, cook and add pinto or black beans to make more traditional) (add more green chili to taste)
