Ingredients

    11 Manicotti sleeves
    1/4 Cup Onion, chopped
    1/4 Cup Green Pepper, chopped
    1 lb. Ground Beef (93% Lean)
    1 Jar (approx 48 oz.) Spaghetti Sauce (Robusto Ragu- Italian Sausage and Cheese)
    1/2 Cup soft bread crumbs (Used Healthy Life Bread- 2 slices, no crust)
    4 oz. Grated Cheese (Used 2% Four Cheese Blend. Recipe called for Mozzarella)
    1 TBS Parsley (dried flakes)
    1 tsp Salt
    1/4 tsp Pepper
    Grated Parmesan Cheese - About 1 Cup

Directions

Cook Manicotti - at sleeves to boiling water and cook 9 minutes.
Cook meat until done, drain
Cook pepper and onion until transparent in a little water
Add cooked meat, 1/4 Cup Sauce, bread crumbs, cheese, parsley, salt and pepper to onions and peppers. Mix well. If mixture is too dry add more sauce.
Pour small amount of sauce in the bottom of large rectangular casserole dish.
Fill Manicotti with meat mixture
Lay side by side in casserole.
Top with remaining sauce.
Sprinkle generously with Parmesan Cheese.
COVER, Bake 350 degrees - 25-30
Remove Cover and Serve

Yield: 11 - 1 Manicotti Servings

Note: Original Recipe called for 3 TBS oil which I omitted. And 1/2 lb. pork and 3/4 lb. ground beef. I used 1lb very lean ground beef instead.
