Introduction

The original recipe called for 1 cup of currants which I don't care for so I substituted a cup of candied fruit which makes them a special Christmas treat. Ingredients

    .5 cup Margarine, soft
    1 cup, packed Brown Sugar
    1 tsp Vanilla Extract
    .25 cup Egg substitute, liquid (Egg Beaters)
    2 cup dry Oatmeal (plain)
    2 tsp Baking Powder
    .5 cup, sliced Almonds
    1 cup (not packed) Raisins
    250 gram(s) Candied Fruit (by FUSARELLIE)
    .5 tsp Salt
    1 cup Flour - Gold medal all purpose flour
    .5 cup Milk, 1%

Directions

Preheat oven to 350 F
Cream together margarine and brown sugar.
Add vanilla and egg substitute.
Combine flour, oatmeal, baking powder, salt.
Alternate milk and flour mixture.
Stir in nuts, raisins and candied fruit.
Drop onto greased cookie sheet.
Bake 15-17 minutes.
Cool on a baking rack.

    I used a small egg for the chemical eggbeaters. Will never cook with candies fruit, So I used dried pineapple. - 12/23/20
