Ingredients

    2 cup Oats, Quaker (1 cup dry oats)
    0.75 cup gourmet nut power up trail mix mega omega trail mix
    1 tsp Baking Powder
    1 tsp Cinnamon, ground
    .25 tsp Salt
    2 large Egg, fresh, whole, raw
    16 oz Almond Breeze Almond Milk, Unsweetened Vanilla
    1 tsp Vanilla Extract
    4 tbsp Smart Balance Buttery Spread
    242 gram Apple - Gala Apple - Apples, raw, gala, with skin - Per USDA
    .25 cup Maple Syrup

Tips

Chop large nuts in trail mix. Top with cinnamon and apple slices for additional sweetness!


Directions

Preheat oven to 325 degrees F. Coat a 9x9 baking dish with cooking spray. In a large bowl, mix 2 cups oats, 3/4 cup trail mix, 1 tsp baking powder, 1 tsp cinnamon, and 1/4 tsp salt. In another bowl, whisk 2 eggs, 1/4 cup maple syrup, 2 cups milk, 1 tsp vanilla extract and 4 Tbsp melted butter. Add milk mixture to oat mixture and stir to combine. Stir in 1 finely chopped apple. Pour into baking dish. Bake about 45 minutes, until top is golden and set. Let cool slightly and cut into 9 squares.
