Ingredients

    1 oz Peanuts, dry-roasted
    10 oz Onion, sweet, raw
    1 lb Carrots, raw
    2 Kaffir Lime Leaves
    42 oz Tyson boneless, skinless chicken breast
    16 oz Potato Yukon Gold
    4 cup Chicken Broth
    1 can Chaokoh coconut milk
    1 tbsp Lime Juice, juice of 1 lime
    1 tbsp Fish Sauce
    2 tbsp Red Curry Paste Mae Ploy
    50 grams Cilantro, raw
    coriander seed,
    cumin,
    star anise,
    cardamon,
    cinnamon

Tips

Experiment with the paste flavors.
Serve over broccoli or with rice


Directions

Mortar cilantro, ginger, garlic, lime leaves, and peanuts into the red curry paste ( made with dried red chile, garlic, shallot, lemongrass, salt, galanga, shrimp paste, kaffir lime peel).
Masman Curry Paste is made with all the same ingredients PLUS (((coriander seed, cumin, star anise, cardamon, cinnamon))).
