Ingredients

1 lb. sweet Italian turkey sausage (links or ground)
1 Tbsp. olive oil

1 large onion, chopped
3 topless celery stalks, finely chopped
2 cloves garlic, minced

8 cups water
2 cups low sodium chicken broth
16 oz. dry lentils, rinsed
3 large carrots, peeled, sliced
2 15 oz. cans diced tomatoes
1 Tbsp. garlic powder
1 Tbsp. chopped fresh parsley
2 bay leaves
½ tsp. dried oregano
¼ tsp. dried thyme
¼ tsp. dried basil
1 tsp. salt, or to taste
½ tsp. black pepper

12 oz. dry Orzo (AKA Ditalini Pasta)
Directions
Step 1
Heat the olive oil in a large pot and cook the sausage over medium heat until browned.
Step 2
Add onion, celery and chopped garlic, and sauté until tender and translucent.
Step 3
Add the water and chicken broth. Stir in lentils, carrot, and tomatoes. Add garlic powder, parsley, bay leaves, oregano, thyme, basil, salt and pepper. Bring to a boil. Reduce heat, cover, and simmer until lentils are tender (1 to 2 hours).
Step 4
Stir in pasta, and cook 15 to 20 minutes, or until pasta is tender.
Serving Size: Makes 8 two cup servings
