I found it difficult cooking for just me after spending my entire like cooking for family. All my recipes were for large portions. I finally went to the internet and got some ideas, then came up with this one that is relatively simple and quick to make. Ingredients

1 serving barilla gluten free pasta (spaghetti, elbows, rotini) 1 serving=2 oz dry=1 c cooked (MOMDECORATES)
1 serving I Can't Believe It's Not Butter, Regular (Soft) Spread, 1 Tbsp
1 serving Garlic, cooked (1 clove / serving)
Directions
Bring a medium sized pot of salted water to a boil over high heat. Add the pasta and cook for 5 minutes. Reserve 2 tablespoons of the pasta cooking liquid and drain the pasta.
While the pasta is cooking, melt the butter in a pan over low heat and add the garlic. Cook, stirring occasionally until the garlic begins to brown slightly. Remove from heat.
Add the pasta and the pasta water to the pan with the garlic butter. Using tongs or a fork, toss the pasta until the noodles are well coated. Season with salt and pepper to taste. Can sprinkle chopped parsley on top if desired.
