Ingredients

1/4 cup finely minced onions
4 tbs butter
1 1/2 cup clean, unwashed raw rice
2 cups chicken broth
1 cup white wine
1/2 tsp parsley
1 bay leaf
1/4 tsp thyme
salt and pepper to taste
Directions
Cook the onions and butter slowly in a large pot with a tight fitting lid for about 5 minutes until tender but not browned.
Blend the rice into the onions and butter and stir over moderate heat for several minutes, not letting the rice brown. The grains will at first become translucent, then will gradually turn a milky colour.
As soon as the rice looks milky, pour in the boiling liquid. Add the herbs and salt and pepper to taste. Bring the pot to a simmer stirring once. Cover the pot and continue to simmer until all of the liquid has been evaporated. If you wish the rice to be al dente leave the lid off, for more tender rice leave it covered for ten minutes before serving. Discard the bay leaf. Fluff the rice with a fork and adjust the seasonings.
