Number of Servings: 3

Ingredients

    2 serving Shrimps (11 shrimps)
    1 1tsp Canola Oil
    2 fl oz Lemon Juice
    3 serving Grape Tomatoes (3oz/12 tomatoes)
    4 cup zucchini zoodles

Directions

Cut zoodles
Sprinkle with salt and set aside for at least 20 minutes (to remove liquid)
Rinse off salt then squeeze between paper towels to remove as much liquid as possible, set aside
Sauté tomatoes in oil until starting to blister
Add shrimp with the zest of 1 lemon and pepper
Once shrimp is done, remove from pan and set aside
Add zoodles to pan and sauté until cooked through
Once zoodles are cooked add shrimp back to pan to heat up
Serve
