Ingredients

1/2 cup Buttermilk, lowfat
1/4 cup Butter, unsalted
1 tsp Cinnamon, ground chilled and cut into cubes
1/4 tsp Nutmeg, ground
2 small Apples, fresh peeled and shredded or one large apple
1/2 medium Banana, fresh mashed 1/4 cup
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Kosher Salt
2 cup Unbleached White Whole Wheat Flour
1/2 cup Granulated Sugar
Tips
I am going to try making this recipe as a savory scone to go with soup sometime. I will use garlic, oregano, basil and maybe some sun-dried tomatoes in the mix for spices. Then put about a fourth cup shredded cheese on top before baking. The cheese will add about 25 calories. I think this will work!
Directions
Preheat oven to 425 degrees. Place parchment paper on large baking sheet.
Take two small apples or one large apple, peel and core, then shred it into a medium bowl.
Add buttermilk, cinnamon, nutmeg and mashed banana. Mix well and set aside.
In medium bowl add sugar, flours, baking powder, soda and salt. Stir then add cut up chilled butter. Smash butter with your fingertips into the flour mixture until small pieces are incorporated. Try not to overwork and melt the butter with your hands.
Add the wet mixture to the dry mixture. Mix well just until all of it it well incorporated. )Do not over mix and do not use a mixer!
Drop with 1/2 cup ice cream scoop onto baking tray so there is space in-between and room to rise.
Bake 425 degrees for 12-15 minutes until golden brown and completely done cooking in the middle.
Note: Before baking you can brush with milk and dust cinnamon and sugar or caster sugar for a little extra flavor.
