Ingredients

3 clove Garlic
1 cup Olive Oil
0.5 cup Lemon Juice
0.25 tsp Kosher Salt (by 65PLUS1)
2 cup kale - Glory chopped kale, fresh
.5 cup, hulled Sunflower Seeds, without salt
4 oz Goat Cheese, Soft
Tips
If you need to rush the olive oil dressing, try smashing the garlic up and let it sit for a couple of hours.
Directions
Soak the three cloves of garlic in olive oil for 24 hours.
Remove garlic cloves (save for other uses if you wish)
Whip in 1/2 cup lemon juice and salt
Wash and dry the kale. Remove all hard stems.
Begin mixing in oil slowly and massage all the kale. The longer you massage the kale, the soft and sweeter it becomes.
Toss in sunflower seeds and Goat Cheese
The nutrition is off - I don't ever use all of the dressing (I end up using about half of it) and you're not eating the garlic.
The seeds can be replaced with just about any nut or seed. The cheese can be replaced with parmesan if you like saltier or harder cheeses. If you really like sweet, add half a cup of dried cranberries or raisins.
