Introduction

My husband and I love chili cheese ANYTHING...I came up with this recipe when I realized I had potatoes I needed to use! This could easily be made healthier with low-fat cheese!

My husband and I love chili cheese ANYTHING...I came up with this recipe when I realized I had potatoes I needed to use! This could easily be made healthier with low-fat cheese!

Ingredients

    1 1/2 lbs small red potatoes, cut up
    2 tbsp olive oil
    1/2 tbsp chili powder
    1 tsp cumin
    3 oz cheddar cheese, shredded

Directions

Preheat oven to 450*

In a bowl, combine the potatoes, olive oil, chili powder and cumin. Mix until well combine (your hands work best for this!)

Cover a cookie sheet with aluminum foil and spray cooking spray on the foil. Pour the potato mixture onto the cookie sheet, making sure it's in an even layer.

Cook the potatoes for 20-23 minutes. Once done, add the shredded cheese to the top and cook for another 2 minutes.

Enjoy! Serves 4

    I made this tonight for my boyfriend and his 14yr old son. They loved it! I might have put a little more cheese on it then called for but the seasonings were right on! - 9/9/08

    Very Good
    I was afraid that the chili and cumin would overpower the potato flavor (I love potatoes) but this was a perfect blend. Used low-fat cheddar, grilled porkchops, and steamed broccoli to make a great meal. - 9/7/08
