Ingredients

    6 serving Egg white, large
    4 oz 1/4 pkg 16 Oz Jennie O Turkey Chorizo Sausage
    3 tbsp coriander fresh (by MJSPHOTO6)

Directions

Cook the chorizo Turkey sausage in a skillet, keeping the chorizo and the juices in the pan. In a small bowl, separate the yolks from egg whites and discard or reserve for another meal. Whisk the egg whites. Add to the cooked Chorizo and over medium heat, turn gently when underside is cooked. Keep turning until eggs are cooked and set dry. Serve with chopped fresh cilantro.
