Ingredients

6 slices thick-cut bacon, chopped
3 lb beef pot roast, chopped to stew size
1 cup red cooking wine
2 cups beef broth
1/2 cup pureed tomatoes
2 carrots, sliced into rounds
1 medium white onions, chopped
1 tablespoon minced garlic
2 tablespoons thyme, chopped
1/2 cup mushrooms, chopped
Directions
1. Set instant pot to saute. Add bacon and cook through.
2. Remove bacon pieces, leaving bacon grease in pot.
3. Add beef to pot and sear 3 minutes each side.
4. Add red wine and deglaze bottom of pot.
5. Add beef broth and tomato sauce.
6. Stir in cooked bacon, carrots, mushrooms, onions, garlic, thyme and mushrooms.
7. OPTIONAL: salt and pepper to taste.
8. Cover and set to Pressure Cook or Manual for 45 minutes.
9. Natural release 10 minutes, then quick release the rest of the pressure.
10. Set instant pot to saute, add in thickener of your choice if desired and thicken sauce, or allow to reduce if you prefer to thicken this way. (NOTE: you do not have to thicken at all, this is preference driven).
11. Turn off instant pot, stir and serve!
