Introduction
A super easy salad that takes minutes to make and makes good use of that leftover chicken in your fridge. A super easy salad that takes minutes to make and makes good use of that leftover chicken in your fridge.Number of Servings: 2
Ingredients

1 cup fresh blueberries, divided
2 tbsp Balsamic Vinegar
1 tbsp Extra Virgin Olive Oil
3 cup Baby Spinach (raw)
1/2 cup sliced Strawberries
2 tbsp diced red onion
2 oz Goat Cheese, Soft
4 ounces cooked Chicken Breast, sliced or diced however you prefer for a salad
Directions
Using an immersion blender or small food processor, blend 1/2 cup blueberries with vinegar and oil until smooth (there may be small bits of blueberry skin... that's okay).
Divide spinach, strawberries, remaining blueberries, onion, cheese and chicken between two salad bowls. Top each with half of the dressing and toss to coat.
VEGAN OPTION: This could absolutely be veganized by omitting the chicken and cheese and subbing in crispy tofu, pecans, walnuts, garbanzo beans, or whatever protein you like.
