Easily substitute almost any veggie, or leave out the chicken for vegetarian.

Ingredients

3 boneless chicken breasts, cooked, cubed
1 box Stove Top stuffing
1 can reduced fat Cream of Chicken soup
1/2 cup light Sour Cream
3/4 cup butter, melted
1 cup shredded carrot
2 cups diced zucchini and/or squash
2 cups frozen corn
1/2 diced onion
garlic, sage, pepper to taste
Directions
Pre-heat oven to 350.
Cook chicken until mostly done. Cube, set aside. Saute zucchini/squash and onion for 5 minutes.
Melt butter and stir with stuffing mix. Set aside 1/4 of the mixture for topping.
Mix together the chicken, sour cream, soup, carrots, zucchini, corn, onion and 3/4 stuffing mixture. Layer on the bottom of a greased 9x12 casserole dish. Top with the rest of the stuffing mixture and bake uncovered for 45 mins or until bubbly. Makes 8 - 1.5 cup servings.
