Ingredients

2 tsp Olive Oil
1 lb Ground Turkey, 85%
2 cups carrots
1/2 medium onion
14.5 oz can diced tomatoes
32 oz Vegetable Broth
32 oz Chicken Broth
8 oz can V8 juice (or other vegetable juice)
1 tsp Oregano, ground
1 tsp Thyme, ground
Black Pepper, to taste
8 oz Pasta, whole wheat elbows, cooked
15.5 oz can Cannelli Beans, rinsed
Directions
1. Brown the ground turkey in the olive oil in a large sauce pan.
2. Add the carrots and onion. Cook for 5-10 minutes, until the carrots are cooked through.
3. Add the diced tomatoes. Stir well. Cook for 5 minutes
4. Add the broths and juice to a soup pot on medium heat
5. Combine all remaining ingredients in the soup pot. Cook for 20 minutes, continuing on medium heat.
