Ingredients

    Canola Oil, 1/4 cup
    Yellow Cornmeal, 1 cup
    Wheat flour, white, bread, enriched, 1 cup
    Granulated Sugar, 1/4 cup
    Baking Powder, 1 tbsp
    Salt, 1/2 tsp
    Milk, 2%, 1/2 cup mixed with 1/2 cup water
    Egg,beaten, 1 medium

Directions

Heat oven to 425 degrees F. Heat canola oil in 10 in. oven-proof skillet or 8 or 9-in. square baking pan in oven for 3 minutes; tilt skillet to coat bottom evenly. Combine dry ingredients. Add milk and egg; mix until blended. Add hot oil, mix well. Pour into hot skillet; bake 20 - 25 minutes or until wooden pick inserted in center comes out clean. 9 servings.

    I made this recipe because it had lower fat and calories, and was a little disappointed. It didn't have a lot of taste. I would try a different recipe next time and sacrifice the calories and fat instead of the taste. - 1/30/12

    I made them in a muffin pan, so I could have more servings and less calories.
