Introduction

I have combined a few recipes I like, trying to find a vegan breakfast muffin. This one turned out to be too high in calories - but it does make a pretty big muffin. Very yummy & filling. Ingredients

    Muffin:
    2 cups flour (half whole wheat, half white)
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 tsp cinnamon
    1/2 tsp nutmeg
    6 TB cup vegan buttery spread
    1 cup raw sugar
    1.25 TB vanilla extract
    1 medium apple, peeled & chopped
    replacement for 2 eggs (applesauce, mashed banana, flaxseed with water, etc)

    Topping:
    1/2 cup brown sugar
    1/4 cup white flour
    3 TB cup vegan buttery spread
    1.5 tsp cinnamon

Directions

Makes 12 large muffins

Mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.

In a separate large bowl, beat together butter, sugar, vanilla, and egg replacements. Stir in the chopped apples. Slowly stir in the flour mixture.

Pour into 12 muffin tins with baking liners.

In a small bowl, make topping mixture. Combine sugar, flour, butter, and cinnamon. Cut together into you get a crumbly consistency. Divide and sprinkle evenly over 12 muffins.

Bake at 375 degrees for 20-24 minutes (when a toothpick comes out clean).

Variations: The next time I try this I will probably add raisins or dates, walnuts, etc.

    I'll try this with (smashed) walnuts instead of the margarine and grate the (locally-grown?) apple (&/or maybe a carrot or two) instead of peeling and chopping. Flax too... this could be a really good recipe for me, thanks for posting! - 5/26/11
