Ingredients

    4 tbsp veg. oil
    1 large onion, diced
    1/2 red bell pepper, diced
    6-8 cloves of garlic, minced
    1 stalk of celery, chopped fine
    1(14oz) can crushed tomatoes
    3 (15oz) garbanzo beans, rinsed
    1/2 cup lentils
    1/4 cup brown rice
    1 teaspoon each: cinnamon, ground ginger
    handful of chopped cilantro & parsley
    1 1/2 quarts of water or vegetable stock
    pepper & salt to taste
    juice of 1/2 fresh lemon

    black pepper & salt

Directions

Saute onions,garlic,celery, peppers.
Add all other ingredients except for the cilantro and parsley, lemon juice.
Cover and cook on medium for 45 or until brown rice is tender.
Add pepper & salt, cilantro, parsley, and lemon juice.

This makes 6-7 servings. Freezes well.
