Ingredients

1 Portabella Mushroom Cap
cooking spray, olive oil flavor, as needed
salt and pepper, as needed
1 T. Mayonnaise, Light
2 wedges of Lemons, juiced, seperated
1/2 Avocado
1 sandwich bun, whole wheat
1 Jack Pepper cheese, sliced (1-oz.)
1/3 Romaine lettuce leaf
1 tomato, slice
Directions
Spray Portabella mushroom cap with cooking spray (Olive oil flavor) sprinkle well with salt and lightly with pepper. Arrange onto a sheet pan and Bake at 500 degree F. until mushroom is tender. About 8 minutes. reserve
Mix mayonnaise with lemon juice of one wedge and pepper, reserve.
Just before serving.
Roughly dice avocado; gently mix with the juice of the other lemon wedge.
To assemble the sandwich spread some mayo mixture on the bun then toast it on a grill. meanwhile heat portabella cap stem side up in the broiler put avocado and slice of cheese in the center and broil until heated. When bun is ready spread with remaining mayonaisse mixture. When Portabella is warm put it on the bun top with lettuce and tomato. Place to top bun on and there you have it.
