Introduction

This is my little experiment one night that turned out fairly good. This is my little experiment one night that turned out fairly good.
Number of Servings: 12

Ingredients

    16 oz lean ground turkey
    1 medium onion, diced
    1 tsp minced garlic
    2 medium celery stalks, diced
    1 medium green bell pepper, diced
    1 can sliced carrots
    1 small eggplant, cubed
    1 can tomato sauce
    2 handfuls spinach, coarsely chopped
    water to cover
    salt and pepper to taste
    oregano
    basil
    cayenne pepper powder
    red cooking wine

Directions

Brown turkey with onions and garlic with a dash or two of red cooking wine. Season with salt and pepper. Add in diced celery and peppers. Cook until it all starts to soften. Add tomato sauce, water, and carrots. Season to taste. Add eggplant and bring to a good boil. Cover and simmer until eggplant gets tender. Add spinach right at the last.

I use a cup of soup as a serving and its very filling. You could serve with rice, maybe pasta, and parmesean cheese is really good.
