Ingredients

1 boneless, skinless chicken thigh
1/3 c. sweet red pepper
1/3 c. sweet yellow pepper
1/3 c. sweet orange pepper
1/2 c. red onion
1/4 c. fennel
1 lime
1 spinach wrap, or other flavor tortilla wrap
Directions
Slice peppers and red onion length wise, slice fennel width wise.
Heat a griddle skillet on medium heat and toss all vegetables in. No oil is needed. Try to place the vegetables so that they go across the griddle marks to give a nicer look to the finished vegetables.
Cover vegetables with a loose fitting lid, allowing the steam to soften them a bit. After 5 minutes remove lid and turn vegetables. Let cook another 5 minutes without the lid until nicely browned then remove to a warming plate.
For the chicken, make sure to cut off any residual fat and skin then place in a hot griddle. Season with your choice of seasonings then place lid over chicken. Let cook til chicken is 3/4 of the way done or temperature reads 150. Turn chicken and season other side. Squeeze lime juice over chicken. Leave lid off for remainder of cooking, or until thermometer reads 180.
To assemble, warm spinach wrap and place it on a plate. Mound vegetables onto wrap. Cut or shred chicken into bite size pieces. Lay chicken over vegetables. Squeeze a bit more lime over wrap and enjoy!
*This can easily be made with a chicken breast to reduce the calories and fat.*
