Ingredients

Sesame Oil, 2 tsp
Chicken Breast, no skin, 2 breast, bone and skin removed, sliced thinly or cubed
Onions, raw, 1 large chopped
5-6 cups of fresh Spinach or 1 package (10 oz) frozen
cooked linguine, 4 oz
1/4 cup dry roasted peanuts
Sauce:
Garlic, 3 cloves chopped
Peanut Butter, smooth style, 3 tbsp
Kikkoman Lite Soy Sauce, 4 tbsp
1/4 cup of heated low sodium chicken broth
1 teaspoon of cayenne pepper (or to taste)
Tips
Substitute fresh mustard greens for the spinach!
This is a meal in itself.
Directions
Put sauce ingredients in a blender and blend.
Heat oil in a pan or wok. Add chicken. Stir fry for 2-3 minutes or until chicken is no longer pink. Add onion, cook until chicken is opaque. Add spinach and stir until spinach wilts. Add cooked pasta and sauce. Heat through
