    2 cups white beans, drained and rinsed
    1/2 red or green pepper, diced
    1/2 cup mild raw onion, thinly sliced
    2 tb olive oil
    3 tb vinegar
    2 tb fresh herbs (or 1/2 tsp dried sage)

Combine ingredients in a medium bowl.
