Ingredients

    2-1/4 cups brown rice
    2 Tbsp. ground cumin (to taste)
    1 tsp. salt (to taste)
    2 cans black beans
    3/4 cup salsa or pico de gallo (to taste)

Directions

Combine rice, cumin, and salt with 4 cups water and cook until rice has absorbed all the water. (Or follow directions for your rice cooker.) Drain and rinse black beans. Combine beans and salsa with warm rice. Great served immediately, but also keeps well in the refrigerator for up to a week.

Makes about 9 1-cup servings.
