Ingredients

6 oz wide noodles
2 tbsp olive oil
4 tsp all-purpose flour
2 cups fat-free milk
1 tbsp grated Parmesan cheese
2 boneless skinless chicken breasts, cubed
1 cup red onion, chopped
1 can peas and carrots
1 tbsp dijon mustard
4 tsp seasoned dried bread crumbs
Directions
1. Preheat oven to 375 degree. Spray 2-quart casserole with nonstick cooking spray.
2. Cook cubed chicken in 1 tbsp olive oil. Set aside.
3. Cook noodles according to package directions, drain.
4. In a medium nonstick saucepan over medium heat, heat 1 tbsp oil. Sprinkle with the flour; cook, whicking constantly, 2 minutes.
5. Whisk in the milk and Parmesan cheese; cook, stirring constantly, until thickened, 2-3 minutes. Remove from heat.
6. Stir in noodles, chicken, onions, peas and carrots, and mustard. Transfer to casserole dish.
7. Sprinkle with bread crumbs.
8. Bake until brown and bubbly, 20-25 minutes.
Makes 4 generous 1-cup servings.
