Introduction

Number of Servings: 6

Ingredients

    1 cup chopped onion
    1 cup chopped green or red peppers
    2 cans of black beans
    1 can of diced tomatoes
    2 T of diced green chilis (or a dried chili works too - just watch the spiciness :)
    1 cup water
    Minced garlic to taste
    Salt, pepper, cayenne pepper, garlic powder Olive oil

Directions

Saute the peppers and onions in the oil. Add in the garlic and just barely brown it. Stir in the spices.

Rise the beans and add them to the crockpot. Toss in the tomatoes with juice, green chilis, and water. When the peppers, onions, and garlic are ready, toss them in and stir. Cook about 8-10 hours.

Great on its own or over rice. Makes about 5-6 main-course servings, each about 1.5 cups.
