Introduction

Ingredients

2 acorn squash, cut in half
1/2 cup crushed saltines/oyster crackers
1/4 cup chopped pecans, unsalted
1/4 cup brown sugar
3 Tbsp margarine/butter, divided
1 cup miniature marshmallows
Directions
Preheat oven to 400.
Half the squash and remove seeds, arrange in baking dish, cut-side up.
In a small bowl, mix crackers, pecans, brown sugar and 2Tb butter. Brush remaining tablespoon of butter over squash. Divide the cracker mixture between the four halves. Cover and bake 50-60 minutes, then top each with about 1/4 cup of the marshmallows. bake uncovered another 5 mins until marshmallows are browned.
Makes 4 servings.
