Nothing could be more simple and more tasty. It's a pleasantly plain accompaniment to your favorite chicken or fish tacos. I get these ingredients (except the lime) out of the yard! Ingredients

    2 whole ripe tomatoes, seeded then chopped
    1 cup onion, chopped
    1 lime
    2 tbsp cilantro
    kosher salt and pepper to taste

Directions

Seed the tomatoes by slicing them in half long way. then cut the ends and put them in your food processor. Slice the onion long way into quarters and put in the food processor, too, and add the cilantro. Juice the lime into the food processor. Pulse 10 times. Stir in kosher salt and pepper to taste. Serve in beautiful bowl with chips, as a dressing for tacos or fajitas, or eat with Egg Beaters in the morning!
