Ingredients

1 clove garlic
1 large onion, chopped
1 cup chopped carrots
1 cup chopped zucchini
1 cup chopped yellow squash
1 cup chopped fresh (or 1 can) mushrooms
1 can (28 oz.) Italian style stewed tomatoes
3 cans (8 oz) tomato sauce
2 cubes beef bouillon
2 tsp dried basil
2 tsp dried oregano
1 tsp ground black pepper
Directions
1. Spray a large sauce pan with fat free cooking spray. Over medium high heat, sautée the garlic, onion and carrots, stirring constantly until they just begin to soften.
2. Add the zucchini, squash and mushrooms and continue to stir until all vegetables are tender.
3. Add all canned tomatoes, spices and beef bouillon. Stir thoroughly.
4. Bring sauce to a boil briefly, stirring occasionally to dissolve bouillon. Turn to low immediately and simmer uncovered for 30 minutes (or longer if desired).
5. Sauce makes approximately 12 3/4 cup servings. Serve over a pasta of your choice.
