This recipe is so easy and so very delicious, sometimes I think I could eat it everyday and don't know how it can be so good for me. It freezes and reheats beautifully. Ingredients

    1 lb. Boneless, Skinless Chicken Breast
    1tbsp. light cooking oil
    1/4 c. Light or Fat Free Catalina Dressing by KRAFT
    2 tbsp. Hoisin Sauce
    1 Bag of Frozen Mixed Stir Fry Vegetables
    2 cups of Brown rice to serve Stir Fry over (optional.)

Directions

CUT chicken into one inch strips

COOK and stir chicken in hot oil in large skillet on high heat 3 min.

ADD vegetables and cook and stir 5 to 6 min. or until chicken is lightly browned.

STIR in remaining ingredients; cook an additional 2 min. or until chicken is cooked through and vegetables are crisp-tender, stirring occasionally.

Makes at least 4 servings depending on how many veggies you use and 1/2 cup brown rice per serving.
