Introduction

I wanted to come up with a Manicotti that was good and low in calories. I used my basic lasagna mixture and added chicken to it and used egg roll wrappers for the manicotti shells You can also use this mixture to make homemade ravoli using won ton wrapper. You can make lasgana with the mixture too. I wanted to come up with a Manicotti that was good and low in calories. Ingredients

    1 Jar Ragu Light Tomato & Basil
    1 container part skim Ricotta cheese
    1 cup shredded Mozzrella cheese
    2 cups frozen spinach - squeezed
    1/4 cup chopped onion
    1 egg
    3 Tbsp Parmesan cheese
    1 8 oz boneless chicken breast- cooked & chopped
    8 Egg Roll Wrappers
    salt & pepper to taste
    1 Tbsp Italian seasoning


Directions

In a large mixing bowl combine the ricotta, spinach, onion, egg, parmesan cheese, chicken, italian seasoning, salt & pepper. Mix well. Put 1/2 cup of the mixture in each egg roll wrapper. Roll up and either leave ends open or pinch them closed. Pour a small amount of sauce in 9 x 13 baking pan. Place rolls in pan single layer and pour remaining sauce over rolls and sprinkle with mozzrella. Bake at 350 for 40 minutes. Makes 8 servings
