Introduction

This recipe was adapted from another, less healthy version. I substituted half healthier ingredients wherever possible. It turned out great and you don't notice the substitutions at all! Ingredients

    Zucchini, 2.5 cup, grated
    Whole Wheat Flour, 1.5 cup
    Flour, white, 1.5 cup
    Granulated Sugar, 1 cup
    Brown Sugar, 1 cup, packed
    Salt, 1 tsp
    Baking Soda, 1 tsp
    Baking Powder, 1 tsp
    Cinnamon, ground, 2 tsp
    Nutmeg, ground, 1 tsp
    Egg, fresh, 1 large
    Egg white, 2 serving
    Applesauce, unsweetened, 1 cup
    Vanilla Extract, 1 tbsp
    Milk Chocolate Candy, 1.5 cup chips

Directions

Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).

Sift flour, salt, baking powder, soda, nutmeg and cinnamon together in a bowl.

Beat eggs, applesauce, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and chocolate chips until well combined.
Pour batter into prepared pans.

Bake for 50 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Makes two loaves with ten pieces each.

    Good, but too sweet. Could stand to use at least 1/2 cup less sugar. Used plain yogurt instead of applesauce since didn't have any, still good. If worried about loss of vol. w/o full sugar, replace w/applesauce or more zucchini. Nuts would be great in this. - 8/29/12
