Ingredients

    1 can (5 1/2 ounces) vegetabel juice cocktail
    2 tablespoons lime juice
    1 teaspoon hot-pepper sauce
    2 cloves garlic, minced
    1/2 teaspoon sugar
    1/4 teaspoon ground cumin
    1/4 teaspoon salt
    8 ounces rotelle pasta, cooked and drained
    3 ounces sliced smoked turkey ham, cut into
    1' strips
    1 can (15 ounces) dark red kidney beans, rinsed and drained
    8 ounces frozen corn kernels, thawed
    1 cup (4 ounces) shredded low-fat cheddar cheese
    3 plum tomatoes, chopped
    3 scallions, sliced
    2 ounces sliced pitted black olives

Directions

1. In a large bowl, combine the vegetable juice, lime juice, 1/2 teaspoon hot-pepper sauce, garlic, sugar, cumin, and salt. Whisk to mix. Add the pasta, ham, beans, corn, Cheddar, tomatoes, scallions and olives. Toss to mix. Taste and add up to 1/2 teaspoon more hot-pepper sauce, if
desired.
