Introduction

This is a fresh, mildly spicy salsa with plenty of fruity goodness. Excellent for parties, low in fat and calories and extremely easy to make.

Number of Servings: 4

Ingredients

    3 cups chopped pineapple
    2/3 cups fresh cilantro leaves
    1 red bell pepper, finely chopped
    1/2 cup red onion or sliced scallions
    2 tbsp jalapeƱo chile pepper, finely chopped
    2 tbsp ground or grated ginger
    8 drops Tabasco sauce (to taste)
    dash of salt

Directions

Place 3 cups of the pineapple in a blender and process until pureed.

Add the cliantro and process for 10 to 15 seconds.

Place in a bowl.

Stir in the remaining 3 cups chopped pineapple. Stir in the bell pepper, scallions or red onion, chile pepper, ginger, Tabasco sauce and salt.

Will keep up to a week covered and refrigerated. Makes about 4 servings of 1 cup each.
