Introduction

I found this recipe in an old book, but substituted lighter ingredients to reduce the calories. Plus, I didn't have enough of the dried fruit and nuts, so if you want to just use the fruit and nuts you like, that would be just fine! Ingredients

    1.5 cup old fashioned oats
    2 Tbsp unsalted butter, softened
    1 cup canned pumpkin (not pumpkin pie!)
    .25 cup brown sugar, packed (light or dark)
    .75 cup Splenda
    1 egg white
    1 egg
    .25 cup light coconut milk
    2 tsp bourbon vanilla
    .5 tsp freshly ground nutmeg
    .5 tsp salt
    .5 tsp baking soda
    .5 cup chopped pecans
    .25 cup sliced almonds
    .25 cup chopped walnuts
    .5 cup dried apples, chopped
    .25 cup dried cranberries
    .25 cup raisins

Directions

Preheat oven to 350... toast oats for 12-15 min, stirring occasionally. Cream butter, sugars and pumpkin. Add eggs, egg white, coconut milk, vanilla and mix until smooth. Whisk dry ingredients except oats, nuts and fruit. Mix dry ingredients into wet ingredients. Stir in oats, nuts and fruit. Put in greased 9 x 9 pan and bake for 30 min and toothpick comes out clean. Cool for 20 + min and cut into 16 squares. Make sure you use a serrated knife and wait until they are cool, otherwise they will be hard to cut! Makes 16 servings.
