Ingredients

    * Chopped Spinach, Food Club, Frozen, 2, 10 oz boxes
    * Chicken thigh, boneless, skinless, 48 oz
    * Shredded Cheese, Food Club, 4 cup
    * Onions, raw, 1 cup, chopped
    * Cornstarch, 2 Tbsp
    * Salt, 1 tsp
    * Pepper, black, 1 tsp
    * Food Club 98% Fat Free Cream of Mushroom Soup, 2 10 oz cans
    * Dairy Pride Sour Cream Light, 2 cups
    * Mushroom pieces, canned, Food Club, 9 oz
    * Miracle Whip, Light, 2/3 cup
    * Food Club Grated Parmesan Cheese, 1 cup
    * Lasagna Noodles, Skinner, 16 oz, cooked

Directions

Preheat oven to 350F

In a large bowl, combine spinach, chicken, cheddar cheese, onion, cornstarch, salt, pepper, soup, sour cream, mushrooms, and mayonnaise. Put a layer of noodles in the botton of a greased lasagna pan. spread half of the spinach mixture over the noodles. Place another layer of noodles on top and cover with the remaining spinach mixture. Sprinkle Parmesan cheese and bake for 1 hour.

    My family and I loved this. I love spinach but the rest of the family only likes it incorporated into a recipe. Not to spicy for 14 yr old daughter, in fact not spicy at all. Just good flavor. BTW, the cheese on the recipe toward the top of the ingredient list is cheddar cheese. - 10/14/09
