Ingredients

    1 medium onion, chopped
    1 sweet bell pepper (red) chopped
    3 jalapeno peppers, seeded and finely chopped
    3 Tbs Extra Virgin Olive Oil
    1/4 cup Creamed Cheese
    1 small can Cream of Mushroom Soup
    1 can creamed corn
    2 cans whole kernel corn, drained
    3 medium tomatoes, seeds removed and coursely chopped
    1/4 tsp sage
    1/4 tsp pepper
    1/4 tsp salt
    1/4 tsp celery seed
    1 cup grated cheddar cheese or monterey jack.
    2 oz Tostito corn chips - broken up



Directions

In a large sauce pan, saute onion and peppers in olive oil until onions are clear. Add soft cream cheese and stir until melted. Add soup, corn and tomatoes and seasonings. Heat on medium until warm and bubbling. Place in a 9x13 baking dish and sprinkle with cheese. Top with broken corn chips and bake in 375 degree oven for 35 minutes. Serves 12.
