Introduction

I have tried making fried rice so many times in the past, but this is the only recipe that has actually come close to the fried rice at my favorite Thai restaurant. It was DELICIOUS! Ingredients

    1 cup brown rice
    1 cup water
    1/2 cup pineapple juice (from canned pineapple)
    1/2 cup orange juice

    1/2 cup finely diced onion
    1/2 cup finely diced carrot
    1/2 cup finely diced celery
    1 cup frozen peas
    1 small can diced pineapple
    1 package refrigerated cooked crab meat (imitation works fine)
    2 cloves garlic, crushed
    1 lime, juiced
    1 tsp ginger
    1 tbsp canola oil
    2 eggs
    Salt & Pepper to taste

Directions

Cook rice in water and fruit juices. Set aside for one day to let rice dry out a bit. The next day, saute onion, carrot and celery in oil. Add garlic and ginger. Add crab chunks and heat through. Crack eggs directly into pan. Let eggs sit until they are mostly cooked and then mix them into the crab and vegetables, breaking them into smaller pieces. Add rice and frozen peas. Cook until peas are hot. Squeeze juice from lime and season with salt and pepper to taste.

    I had this with the Hawaiian BBQ salmon and it was GREAT! A good compliment! I have never made fried rice before, and was nervous to make it, but the flavor is wonderful!! - 10/23/09
