Introduction
Even my meat-loving husband admitted that if you closed your eyes you wouldn't know the difference. I parboiled the peppers and cooked the lentils the night before to save time. Ingredients

3/4 c dry lentils
3c water
2 bell peppers
1 can tomato sauce
1/2 c chopped onion
1/2 c italian style bread crumbs (you can substitute brown rice)
2 egg whites
2 scant T onion soup mix
1/8 t garlic powder
dash black pepper
Directions
Place the lentils and water in a microwave safe dish. Microwave on high for 20-30 minutes(depends on how soft you want them). Cut peppers in 1/2 lengthwise, remove seeds and cap. Parboil the peppers.
In mixing bowl mash the lentils just enough to make them sticky. Add remaining ingredients and mix thoroughly. Place pepper halves on microwave safe dish and fill with lentil mixture. They will be very full.
Microwave on high for 20 minutes, turning them around on plate 1/2 way through.
