Ingredients

1 Chicken Breast, skinless, boneless; cut-up
1 Apple (i prefer Red, but your discrestion); cut-up
1 or 2 Garlic cloves, chopped (I love garlic, but again, your preference)
about 1/4 sweet onion, medium; chopped
Olive oil
Directions
For a quick meal, have the chicken cut up into pieces as it cooks faster.
Add olive oil to the bottom of a skillet (enough to cover the bottom) and turn on med. heat. When oil is warm, add chopped onions, garlic and apples to skillet and saute until golden brown. Next add the chicken, making sure to coat each piece. Cover and allow to simmer, making sure to stir occasionally to prevent burning. Add additional spices if you prefer (i.e. salt, pepper, etc.)
Chicken is done when it is cooked the whole way through, and is no longer pink inside. Can be served with a side of your favorite veggies, or on top of some rice.
